The Product

As a final product we created recommendations for SAIL in 2025, which contribute to their sustainability ambitions and help to capitalise on the potential of SAIL to act as a catalyst for sustainable urban development. Our recommendations exist of general recommendations, as well as thematic recommendations. The four themes are: ‘organisation and relations’, ‘finance and regulation’, ‘communication’ and ‘menu-engineering’. For each of these thematic recommendations the most impactful and desirable opportunities are listed below.

Set clear ambitions, and create awareness of what these entail and imply among all relevant parties.

Due to the lack of data from past editions and the significant changes in consumer needs, it is essential to monitor the food supply systems at SAIL 2025 to be able to make estimations for next editions.
In order to address scaling problems of local food supply, develop close and early collaboration with producers.

To strengthen SAIL's visions and actions look for partners and sponsors whose vision aligns with SAIL's ambitions.
As SAIL is an open event, it is important to consider the existing competitive landscape. Therefore, engage with partners in the event's physical playing field (the city itself).
To balance sustainability practices and adequate revenue for catering businesses, use a tender to find suitable caterers and food trucks.

SAIL cannot achieve its goals alone, but needs to work together, so the ‘right’ people need to be brought together.
