The Process
The Living Lab Approach
This project was developed using a Living Lab approach, meaning that it is based on a real-life context, using stakeholders to find opportunities and solutions. The process is based on continuous iteration and experimentation to improve the final results.
The activities
This living lab is based on multiple cornerstones. The figure below shows a timeline, from the beginning of September until the end December, with the different activities that led to our final conclusions, such as a literature review, expert interviews, and a co-creation session. All phases ran parallel but also functioned as iterative activities for each other.

Literature Review
We did a literature review to identify how events can serve as an urban catalyst, as well as a literature review of a sustainable food supply systems. This led to the first rough versions of the conditions for a sustainable food supply at SAIL 2025.

Expert Interviews
We conducted 14 interviews with experts from both the event and food sector to understand the view of the stakeholders and the dynamics of sustainable food supply systems at events.

Co-Creation
During a co-creation session, stakeholders with different perspectives were brought together to create ideas, and solutions. In this case 15 stakeholders focused on exploring and prioritising dilemmas, and opportunities for creating a sustainable food offer for all visitors of SAIL 2025.

Validating Outcomes
After the co-creation session, the opportunities were structured based on reoccurring dilemmas. The impact, difficulty and desirability of the opportunities were used as evaluation measures. The most desired and impactful outcomes were validated by 3 experts who did not attend the co-creation session.
