
About this Living Lab Project
We are three students from the MSc Metropolitan, Analysis, Design and Engineering (MADE), a joint degree by de TU Delft and Wageningen University & Research, hosted by the AMS institute. During the MSc MADE masters several urban themes are focused on that are results of rapid urbanization. MADE educates students to become young urban innovators that are experts in interdisciplinary teamwork and solving complex metropolitan challenges. The Living Lab Project is part of the second year of the MADE program.

The Living Lab is a project in which students in teams will try to find solutions to metropolitan challenges that are offered by a case owner. In order to do so, students engage with important stakeholders related to the challenge, such as organizations, the municipality and citizens. Through co-creation sessions, these stakeholders are connected to jointly work on creating a product to solve the problem. The product is developed by the Living Lab team and then tested in a real life setting: a Living Lab! With evaluations and tests the product will be fine-tuned. The outcome? A product that is supported by all main stakeholders and that will solve the challenge at stake!

This Living Lab was set up to create a zero food waste concept for a restaurants. By interviewing experts, co-creating with stakeholders such as Samen Tegen Voedselverspilling, Vermaat and Wageningen U&R, and doing literature research we have created a roadmap that can guide restaurants step by step towards a zero food waste concept. With this roadmap we aim to help à la carte restaurants to become zero food waste. We hope we can inspire restaurants with this roadmap to contribute to the worldwide fight against food waste.
